La carne preparada con una cocción lenta no está tan
caliente como la carne asada de forma convencional.
Para evitar que la carne asada se enfríe rápidamente, calentar el plato y
servir la salsa muy caliente.
Desea conservar caliente carne que se ha preparado
con la cocción lenta.
Una vez terminada la cocción lenta, volver a cambiar la temperatura a
70 °C. Los trozos de carne pequeños pueden mantenerse calientes hasta
45 minutos; los trozos grandes hasta 2 horas.
