Gelderse bonensoep met
varkensvlees
Verrassend lekkere zomersoep.
Ingrediënten
250 gram gedroogde witte bonen
500 gram varkenslappen, in reepjes
1 ui, met schil - 1 wortel - stelen van peterselie
versgemalen zeezout en zwarte peper
500 gram aardappelen, in blokjes - 1 ui, gesnipperd
500 gram snijbonen, gesneden
250 gram bleekselderij, in boogjes
groen van bleekselderij, fijngehakt
3 takjes peterselie, groen fijngehakt
10 gram bieslook, in stukjes van 1 cm
Bereiding
Strooi de gedroogde witte bonen in het mandje van de snelkookpan
en zet dit in de pan. Voeg 2 liter water toe, sluit de pan en breng de
pan onder drukstand 2. Kook de witte bonen 5 minuten, neem de pan
van het vuur en laat hem in zijn eigen tijd van druk komen: de witte
bonen zijn nu voorgekookt. Neem het mandje uit de pan. Leg de
varkenslappen in het kookwater van de bonen, voeg de ui met schil,
wortel, peterseliestelen, een flinke draai zout en peper toe, sluit de
pan en breng de pan opnieuw onder drukstand 2. Trek bouillon in 20
minuten. Breng de pan volgens de instructies van de druk af en open
de pan. Verwijder de ui, wortel en peterseliestelen. Schep de voorge-
kookte witte bonen, aardappelen, ui, snijbonen, bleekselderij en ui in de
pan, sluit de pan en breng de pan opnieuw onder drukstand 2. Kook de
soep nog 8 minuten. Breng de pan volgens de instructies van de druk
af en open de pan. Breng de soep op smaak met zout, peper, bleeksel-
derijgroen, peterselie en bieslook.
Tip Lekker met grof brood en gezouten boter.
