5.12. Cajón de frutas y verduras con
control de humedad (Ever Fresh)

Los niveles de humedad de las frutas y de las ver-
duras se mantienen bajo control con la función del
cajón de frutas y verduras con control de humedad
y se garantiza que los alimentos se mantengan
frescos por más tiempo.
Coloque las verduras de hoja, tales como lechuga,
espinaca y aquellas hortalizas sensibles a la
pérdida de humedad, en posición horizontal en la
medida de lo posible, dentro del cajón, no sobre
sus raíces en posición vertical.
Nunca deje las hortalizas dentro del cajón de
frutas y verduras en sus bolsas. Si las hortalizas
se dejan dentro de sus bolsas, se descompondrán
en un breve período de tiempo. Cuando se fije un
nivel de humedad alto, las frutas y verduras con-
servarán su contenido de humedad y se podrán
mantener por un período de tiempo razonable sin
necesidad de dejarlas dentro de sus bolsas. En
caso de que no desee que las frutas y verduras
estén en contacto entre sí por cuestiones de
higiene, utilice un papel perforado, espuma u otros
materiales de embalaje similares en lugar de una
bolsa.
Mientras se guardan las frutas y verduras, tenga
en cuenta su peso específico. Las frutas y verdu-
ras más duras y pesadas deben colocarse en el
fondo del cajón y aquellas más blandas y livianas
deben ubicarse arriba.
No coloque juntos peras, albaricoques, meloco-
tones, etc. y manzanas, en particular, en el mismo
cajón que otras frutas y verduras, ya que tienen
un alto nivel de generación de gas etileno. El gas
etileno emitido por estas frutas puede ocasionar
que las otras frutas maduren más rápido y se
echen a perder en poco tiempo.
