stabilisation
Low temperature stabilisation is ensured by
a fan that circulates the hot air around the
dish.
- to make bread dough rise
- to warm plates
- keep dishes warm
This mode alternately combines the effect of the
fan and that of the grill: the grill pulses the food
with infrared and the air movement generated by
the fan attenuates the effect.

meats and poultry
