9.2 Peperoni brasa con quinoa

Ingredien:
100g Quinoa
4 peperoni (rossi)
300ml di brodo vegetale
120g funghi
100g di parmigiano graugiato
Curry in polvere
1 cucchiaino da the di nocchio (tritato)
1 scalogno
1 spicchio d'aglio
1-2 cucchiai di olio di girasole / olio di colza / olio di oliva a piacere
Lavare in precedenza la quinoa in acqua fredda, per sciacquare l’amaro. Scaldare
300ml di brodo vegetale con nocchio e cuocervi la quinoa per 10 minu. Togliere
la quinoa dal fuoco e lasciarla gonare per altri 10 minu. Nel fraempo rimuo-
vere il picciolo, pracando un taglio circolare al di soo di esso, insieme al torsolo
dei peperoni. Togliere tuo il torsolo dei peperoni. Pulire lo scalogno e l’agio e
spezzeare. Tagliare i funghi in piccoli pezzi e rosolarli in un tegame unendo il cur-
ry in polvere, lo scalogno e l’aglio. Inne aggiungere la quinoa ai funghi, condire
con parmigiano e riempire i peperoni. Cuocere i peperoni con un po’ d’olio per
circa 12-15 minu a 160°C nella friggitrice ad aria calda Arendo.
