9.2 Peperoni ripieni di quinoa e funghi
Dosi: 2 persone
Preparazione: 20 - 30 minu
100 gr di quinoa
4 peperoni (rosso)
300 ml di brodo vegetale
120g di funghi
100g di parmigiano graugiato
Curry in polvere
1 cucchiaino di nocchio
1 scalogno
1 spicchio d’aglio
1 - 2 cucchiai da tavola opzionale olio di girasole / olio di colza / olio
d’oliva
In primo luogo, lavare accuratamente la quinoa soo acqua fredda per eliminare
le sostanze amare che può contenere. Scaldare 300 ml di brodo vegetale con
il nocchio e cuocere la quinoa nel brodo per 10 minu. Togliere la quinoa e
lasciare riposare per 10 minu. Nel fraempo, tagliate i peperoni soo il gambo e
rimuovete completamente i semi. Sbucciare e tritare lo scalogno e l‘aglio. Tagliate
poi i funghi a pezze e friggete brevemente in una padella con il curry in polvere,
scalogni e i pezzi d‘aglio. Inne, mescolare la quinoa con i funghi, aggiungere il
parmigiano e Riempire i peperoni con questo composto. Meere i peperoni con
un po‘ d‘olio nella friggitrice ad aria calda Arendo per circa 12 - 15 minu a 160°C.
