Voorbereiding:
Tomatensaus
Ingrediënten van het deeg:
500 g meel Type 405
250 ml water
20 g gist
•1 ei
2 eetlepels olijfolie
1 theelepel zout
Bereidingswijze van het deeg:
Los de gist op in het water en kneed dit samen met de overige ingrediënten tot een zachte
deeg. Laat het deeg vervolgens 30 minuten afgedekt rijzen en vouw het deeg gedurende
deze periode drie keer samen.
Ingrediënten tomatensaus:
2 blikken gepelde, gehakte tomaten (800 g)
100 g uien, fijngehakt
2 tenen knoflook, fijngehakt
zout, peper, oregano of pizzakruiden
Bereiding tomatensaus:
Uien, knoflook en kruiden door de tomaten mengen en inkoken tot een dikke saus ontstaat.
Laten afkoelen.
Ingrediënten vulling:
600 g feta of mozzarella, grof geraspt, per pizza 150 g
Extra's 400 g:
ham, salami, champignons, blokjes spek, ansjovis, per pizza 100 g
Bereiding:
Het deeg in 4 porties verdelen, tot een bal kneden en met veel bloem in ca. 3-4 mm dikke
schijven rollen. Deegschijven met koude tomatensaus bestrijken, ca. 1 cm langs de rand
vrijhouden. De gewenste extra's en de feta of mozzarella gelijkmatig erover verdelen.
Bakken in voorverwarmde oven op 230°C

QUICHE LORRAINE
Ingrediënten van het deeg:
250 g meel Type 405
125 g boter
60 ml water
1 theelepel zout
wat peper en nootmuskaat
Voorbereiding:
Meng het meel, de boter en het zout door elkaar, voeg het water toe en kneed het geheel
snel tot een deeg.
